  • Coconut milk- 1 14 oz. Can (full fat)
  • Vanilla extract- 2 tsp
  • Tapioca flour and water- 4 tsp mix well
  • Maple syrup- ¼ cup
  • Unsweetened coconut flakes (per taste)

Process:

  1. Take a large mixing bowl and coconut milk and chill it in the freezer for 15 minutes.
  2. For next 10 minutes whip the milk and other ingredients in the bowl until the firm peaks of cream appear.
  3. Pour the mixture into your ice-cream container and cover it with plastic wrap and foil.
  4. Allow it to freeze for 4-5 hours
  5. Let the mixture thaw for 5-10 minutes and scoop to serve.
